Tuna Salada and Avocado

Thanks to Channin, I learned my second best combination two weeks ago: tuna salad with avocado! Mix tuna with green onions, avocado, lemon juice, salt, pepper and mayonnaise and spread on bread for a sandwich, or over a salad, like the picture above.

Risotto

No, I don’t think a risotto is a beautiful image: all that food mixed together. But it doesn’t mean that it isn’t tasty! My challenge is always to find a tasty and packed with nutrients recipe for my family’s meal. Not an easy task but the good thing is that I like to cook almost everything from scratch – if I have the time to do so, which makes the nutrient part of it easier to accomplish.

Lentil Soup

Lentil soup

It is a perfect definition of ‘comfort food’! You can make it in no time and add as many vegetables as you want, transforming it into the most complete meal… I started soaking the grains in water for a few hours, cooking in the pressure cooker for about 20 to 30 minutes, with potatoes cut in bite size pieces. When cooked, I added my onions, garlic and a smoked sausage that I cooked in olive oil until medium brown.

Quinoa

One of the most nutrient-packed grains, quinoa is easy to prepare and it tastes delicious in salads, soups and even with yogurt… Cook it with water (proportion of 1 quinoa x 2 water) until the water is gone. Season with anything you want and voilà… you have a tasty and healthy meal!
