
I like food. No, I mean, I really like food. I like to cook and I do like to eat. Around 15 years ago, I started reading about a better nutrition and completely changed my diet. Then I moved to Canada and had to adapt to a new country, new food habits and a more expensive pantry. It was (is) a very hard adaptation and I still miss the amount of fresh fruits available in Brazil. I had my vegetarian phase as well and now, as my son would say, I am an omnivore, but would be content with even less meat in my diet.
I could understand how easy it is to create a menu around a meat dish until I went to Nourish Bistro, 110, 211 Bear Street, Bison Courtyard in Banff, AB. My first experience at Nourish was still on the old and obscure location, but same amazing food. The atmosphere at the new location is much better and inviting and you will not find any Buddhas or New Age music on site, but I didn’t love the colourful lights though (hence the purple pics!).
We were in Banff a couple of weeks ago when we decided to dinner at Nourish: me, my 6 year-old son and Nick. Nick is also a foodie – a very carnivore one, but I knew he was going to love it. I was right. Ian loved it too and I dare you not to. Nourish offers vegetarian and some wheat and gluten-free options to send you home begging for more. Nick’s option was the ‘portabellington’ and it took a bit to get ready, but they kept us updated about the delay. It did worth the waiting, though, as the mushroom was very tasty.
I had the nachos with Ian: 27 ingredients, sometimes more including strawberries, 10 beans and, of course, melted aged cheddar. The result is an incredible burst of flavour. ‘So, you’ve heard of these, huh?’, they announce on their menu. ‘Legend has it that there is no better nachos made in this galaxy’. I have to agree with them. ‘Nourish is dedicated to offering a tapas style service with dishes intended as a unique taste experience. A beautiful variety of organic savory and sweet dishes designed with the concept of sharing in mind’, they explain on their homepage. The portions are big and perfect to share. And, if I can give you a suggestion: do it. They have too many delicious dishes for you to try just one!
