No, I don’t think a risotto is a beautiful image: all that food mixed together. But it doesn’t mean that it isn’t tasty!
My challenge is always to find a tasty and packed with nutrients recipe for my family’s meal. Not an easy task but the good thing is that I like to cook almost everything from scratch – if I have the time to do so, which makes the nutrient part of it easier to accomplish.
I didn’t come up with this recipe but followed it from here. I had to adapt a bit omitting the zucchini as I didn’t have it. Why this recipe? Because it is asparagus season and I am having as much as I can! So delicious!
I also wanted to try a brown rice risotto and it ended up tasting better than I thought.
