
My son is starting school today. First day of his life. To add to his already busy schedule, swimming lessons in the mornings, twice a week. In an attempt to not miss the school bus these days, I have to feed him between the rec centre and the daycare. Nutritive, delicious sandwich that will substitute his lunch. First option? Tuna sandwich with home-made tofu mayonnaise.
Tofu Mayo
1 package of organic tofu
1 tbsp red wine vinegar
1 tsp Dijon mustard (organic)
1/8 tsp turmeric
1 tbsp olive oil
salt and pepper to taste
Blend all ingredients in a blender until smooth and creamy. Ready to serve!
For the tuna sandwich, just mix it with tuna and spread over your favorite sprouted whole grain bread.
It can’t get much easier and faster than that.
